What to tell a food tour before you turn up.
This is the one activity where the small print is about your body. Say what you do not eat when you book, not on the pavement: kitchens on a fixed tasting route cannot improvise. Arrive hungry, expect to walk two or three kilometres between stops, and read the alcohol line if you are not drinking, because a third of the price can be wine. Vegetarians do well in Italy and India and struggle on a seafood route.
